wanna make oxtail that kills?

his is my favourite recipe for cooking for a party of four. it is easy and no brainer for anyone. if rats can cook, so can you!!!

4 pds fresh oxtail
fresh rosemary
fresh thyme
one can of diced tomatoes
one box of beef broth
one bottle of red wine (zinfandels are what i use)
olive oil
celery (cut into one inch pieces)
2 bags of baby carrots
1 bag of pearl onions (peeled)
one clove of garlic (peeled)
one box of grape or cherry tomatoes
salt and pepper to taste
1 cup of cous cous
half cup of raisins

1. heat olive oil in skillet and when hot place cleaned oxtail pieces in to brown
2. once browned, flip and do the same till two sides are browned
3. remove meat from heat into the baking tray
4. pre heat the oven to 350 degrees
5. place all the vegetables into the tray with the meat
6. pour in the can of diced tomatoes and beef broth as well as wine till it covers the meat along with the sprigs of herbs
7. place the tray into the oven and cook slowly for about 4hours
8. check on it every 20mins making sure it does not dry up. add more broth if needed
9. towards the end of cooking, add in some salt and pepper according to taste
10. remove once you feel like the meat if falling off the bone!!!
11. place cup of cous cous into 2 cups of boiling water
12. add raisins and a pinch of salt and cover the pot for three to five mins
13. once all the liquid is absorbed, served the cous cous on a plate topped with the yummy oxtail and you are ready to eat!!!!
